Q: Should I cook this meat different than conventional
beef?
A: Yes and No, if you normally buy extra lean, cook this the same -
however if you havn't experienced extra lean, cook this a little slower,
thus lower heat and longer time.
Q: Why is the fat not white?
A: The colour in the fat is a combination of natural carotenes from
pasture feeding, this comes from the organic grass pastures they have
consumed. The outer skin of some cuts is best trimmed off at cooking
time as this can be strong tasting.
Q: How long can this be kept?
A: If the packaging is in good shape, because of the extra lean cuts,
this meat will keep well over a year in a good chest deep freeze. Vacuum
bag packaged meats keep virtually indefinately in the freezer.
